If you did not visit the Prague Castle on the hill, that is a MUST SEE.  The Guinness Book of Records lists Prague Castle as the largest ancient castle in the world since it is almost 70,000 m2, 570 meters in length and about 130 meters wide.  St Vitas Cathedral was started in 1344 and building continued until the first half of the 15th century.  For the next few hundred years the building burned, was renovated, added on to and changed. The cathedral was finally finished in 1929, almost 600 years after it was started.

Another must see is the Astronomical Clock in Prague that was installed in 1410, making it the third oldest astronomical clock in the world. 

If you want to eat traditional Czech food, but in a Vegan manner, I understand that LoVeg is excellent and reasonably priced. As you mentioned there is a chain of Vegan Chinese restaurants  called Loving Hut that is relatively inexpensive.  One is located at Wenceslas Square in city center. This one has a buffet where you pay by the weight.
